A braai is not a barbecue — it's a social institution. Boerewors goes on first (it's the thickest), lamb chops last (they cook fast). Always bring something. Never touch another person's tongs without asking.
South African Indian cuisine, particularly Durban curry, is its own genre. Bunny chow, mutton curry, roti — it's hotter and richer than most Indian restaurant food overseas. The bunny is always eaten with your hands, no cutlery.
Cape Malay cuisine (bobotie, bredie, koesisters) blends Indonesian, African, and Dutch influences. Bobotie is the national dish — spiced minced meat with an egg custard top. Sweeter than you expect and far more complex.
Pap (maize porridge) is South Africa's rice equivalent. Stiff pap for braais, soft pap for breakfast. It's neutral and filling — it's about the sauce (sous) and relish on top.
